It is 8:50 p.m. Yesterday I made Blueberry Muffins and Banana Walnut Breads. I got the recipes from the cookbook “The New Boston Globe Cookbook.” I thought the muffins came out really good – the blueberries were not too tart but were complimented by the addition of lemon juice and lemon zest in the batter and the muffins were not overcooked. The banana breads were okay – I had only two cups of flour instead of the three cups of flour for the recipe. Also, I didn’t have time to toast the walnuts for the breads. The result: it tasted fine except one of the breads had a slightly wet bottom. The smell of the breads coming out of the oven was delicious.
I also want to make quesadillas this week.
