Cake Success

I made a delicious pound cake yesterday. It was from a magazine I bought in 2019. It is called Ultimate Southern Cream Cheese Pound Cake. When I tried it today, it wasn’t dry or too moist, the crumb tasted just right, the cream cheese flavor wasn’t too pronounced, and the crust had a nice crunchy top. My friends Rosanne and Pete liked it. It was a tall, rich cake that paired well with coffee and also tea.

I freezed some of the cake, and I still had some leftover cake that I placed in my refrigerator.

What to make?

I haven’t decided what to make this week. I’ve invited a friend to come to my apartment on Friday for some cake and coffee, and I have a phone call to make this week to two other friends who might be coming here too.

Maybe not another cake recipe. I’ll have to do some searching again.

A New Week

I’m glad that my Pecan Berry Coffee Cake came out good. I put several pieces in plastic containers and put them in the freezer. I’ve invited a friend for cake and coffee this Friday, and I might have two other friends coming to my apartment sometime this week.

I’d like to look at other cookbooks and recipes to see what I might want to try to bake or cook. I haven’t attempted a pie recipe in a long time. Maybe I can attempt a recipe from one of my magazines.

I went over to one of my Godmother’s houses today. I had a nice time. I’m Portuguese, and I understood most of what was being said, although I hardly speak it. There was also some cake and coffee served. I had a glass of apple juice. I’ve never really attempted a Portuguese recipe. Nothing wrong with tradition, I just haven’t been inspired in a long time.

I hope there is something interesting on t.v. tonight.

Coffee Cake

I will be making a coffee cake tomorrow. It is a blueberry coffee cake. I’ve already made this cake a few times. It is really delicious. It is not too dry and has a great pecan topping. I’ve also baked other coffee cakes, two recipes from The Joy of Cooking and another from The Modern Baker.
